Ingredients:
- 4 large ripe vine / plum tomatoes
- 1 cup onion chopped
- 1 jalapeno chiles, stemmed, seeded and finely diced
- 1/2 cup cilantro, chopped
- 1 tsp. lemon juice
- salt to taste
Instructions:
Skin tomatoes by placing in a bowl of boiling water for 4 mins.
Chop and mix with chilli, onion and cilantro. Add 1 tbsp lemon juice and a salt to taste – mix well and serve.
